Open the can and empty out its contents, allowing the cod to rest for at least 5 minutes. Serve in a bowl, seasoned with a drizzle of extra-virgin olive oil and a pinch of freshly-chopped parsley.
Best enjoyed on toasted bread (as crostini) or with polenta.
