Preparation
In cold water: the method is very simple and leaves the flavor of the mushrooms unaltered. After 30 minutes of soaking in cold water, the mushrooms become soft again.
In warm water: to speed up the rehydration process, we can use warm water. The dried mushrooms should be immersed in non-boiling water for about 10 minutes. This method is fast and keeps their flavor intact.
Use them for a good mushroom risotto or to create an excellent appetizer (cicchetto).
